ENSALADA DE GARBANZOS Y ZANAHORIAS



¿Ya habéis comido vuestras dos raciones de legumbres esta semana? ¿No? Venga, animaos y probad esta ensalada de toques mediterráneos!

INGREDIENTES
  • 300 gr zanahoria, en rodajas finas
  • 300 gr garbanzos, bien escurridos
  • 80 gr uvas pasas
  • 10 hojas de menta fresca, cortadas
  • 60 ml aceite de oliva
  • 2 cucharadas de zumo de limón
  • 1 cucharada de miel
  • 1/2 cucharada de sal
  • 1/4 cucharada pimentón dulce
PREPARACIÓN
  • En un recipiente mediano, mezcla los garbanzos, zanahorias, uvas pasas y menta.
  • Para hacer el aliño, mezclar bien en un recipiente el aceite de oliva, zumo de limón, miel, sal y pimentón. Yo lo pongo todo en un frasco pequeño, lo cierro y agito hasta que quede todo bien mezclado.
  • Revuelve la ensalada con el aliño hasta que todo esté bien mezclado.
 


English version: CHICKPEA AND CARROT SALAD
Ingredients:
  • 300 gr carrots, sliced
  • 300 gr chickpeas, drained
  • 80 gr raisins
  • 10 leaves fresh mint, torn
  • 60 ml olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1/2 tablespoon salt
  • 1/4 tablespoon cayenne pepper
Steps:
  • In a medium bowl, combine the chickpeas, carrots, raisins and mint.
  • To make the dressing, mix the olive oil, lemon juice, honey, sal and cayenne pepper. I put it all together in a samll jar and shake it untill everything is mix together.
  • Toss the salad with the dressing until everything is evenly coated.

GRANOLA


Hace ya algún tiempo que incorporé la avena a mi desayuno diario. A veces mezclada con otros cereales, y casi siempre con yogur, y aunque me gusta tenía ganas de variar un poco la manera de comerla, que ya me estaba cansando.
Así que probé a hacer granola casera, y el resultado fue espectacular! Os recomiendo a todos que la probéis, creo que mis desayunos han cambiado para siempre!

INGREDIENTES
  • 400 g copos de avena
  • 170 g nueces
  • 60 g coco rallado
  • 85 g pasas
  • Ralladura de la piel de dos naranjas
  • 85 g mantequilla
  • 120 ml sirope de arce
  • Una cucharada de sal
PREPARACIÓN
  • Calentar el horno a 150ºC
  • Mezclar la avena, las nueces, el coco, las pasas, la piel de las naranjas y la sal en un bol grande.
  • Derretir la mantequilla en una sartén (o en el microondas a baja potencia) y mezclar bien con el sirope de arce.
  • Finalmente, añadir esta mezcla al bol de la avena y mezclar de nuevo durante al menos un minuto para que los cereales se queden bien empapados.
  • Extender en dos bandejas de horno en una capa fina.
  • Cocinar en el horno durante 40-50 minutos o hasta que se vea la granola tostada.
  • Sacar del horno y presionar la granola con una espátula metálica.
  • Dejar enfriar y guardar en un recipiente hermético.

English version: GRANOLA

Ingredients:
  • 400 g rolled oats
  • 170 walnuts
  • 60 g flaked coconut
  • 85 g raisins
  • Zest of two oranges  de la piel de dos naranjas
  • 85 g butter
  • 120 ml maple syrup
  • 1 teaspoon salt
Steps:
  • Preheat oven to 150ºC
  • Mix the oats, walnuts, coconut, raisins, orange zest and salt in a big bowl.
  • Heat and melt the butter on a pan (or in the microwaves, low power) and mix together with the maple syrup.
  • Finally, add this mixture to the big bowl and mix again for at least one minute to make sure the cereals get well coated.
  • Spread the mixture in two baking trays into a thin layer.
  • Bake in the oven for 40-50 minutes or until the granola is toasty and golden.
  • Remove from the oven and press the granola with a metal spatula.
  • Allow to cool and store in an airtight container at room temperature.

AVENA CON PLÁTANO y PASAS al HORNO








































Desde hace más de un año empezé a desayunar avena y aunque la mayoría de las veces la preparo en un bowl, ya sea cruda o cocida... siempre estoy buscando recetas para probar y esta es una que hago de vez en cuando, sobre todo las semanas que sé que tendré poco tiempo a la mañana y necesito un desayuno para llevar. Es más rico tibio, recién salido del horno...pero frío también está bien.

Ingredientes:
  • 200grs o 2 tazas de avena entera
  • 450 ml o 2 tazas de leche de avena (o leche normal)
  • 2 bananas/plátanos bien maduras, cortada en rebanadas de 1cm
  • 180grs de pasas de uvas (o arándanos o ciruelas o orejones)
  • 1 huevo
  • 2 cucharadas de mantequilla
  • 60grs de avellanas (o nueces o almendras)
  • 60grs de azucar moreno o sirope de arce
  • 1 cuchara de extracto de vainilla
  • 1 cuchara de polvo de hornear
  • 1 pizca de sal
Pasos:
  • Precalentar el horno a 190º y enmantecar un molde grande para horno.
  • En un bowl mezclar la avena, la mitad de las avellanas, el azúcar, el polvo de hornear y la sal
  • En otro bowl batir el huevo y mezclar la leche, la mantequilla y vainilla.
  • En el molde del horno colocar las rodajas de banana como base, y añadir 2/3 de las pasas de uva. Cubrir con la mezcla de la avena y volcar con la mezcla del huevo  y mover el molde para que asegurar que la mezcla cubre todo bien. 
  • Espolvorear con el resto de las pasas y avellanas por encima y colocar en el horno por 35-40 minutos, hasta que esté bien dorada. 
  • Retirar del horno y dejar enfriar un poco. Se puede añadir más azucar o sirope de arce si te gusta más dulce. 

English version: BAKED OATMEAL with BANANA and RAISINS

One year ago I started to eat oats for breakfast, mostly oatmeal/porridge or as cereal but I´m always looking for new recipes to try with oats. This one I do it normally in those hectic weeks that I know that I won´t have time in the mornings and I need breakfast ready-to-go!

Ingredients
  • 200g or 2 cups of rolled oats
  • 450ml or 2 cups of oat milk (or regular)
  • 2 ripe bananas cut into 1cm slices
  • 180g raisins (or berries of your choice)
  • 1 egg
  • 60g of hazelnuts (or mixed nuts)
  • 60g of cane sugar
  • 1 tbsp of vanilla extract
  • 1 tbsp of baking powder
  • A pinch of salt
Steps:
  • Preheat the oven to 190º and butter the inside of a large baking dish.
  • In a bowl mix the oats, halves of the hazelnuts, sugar, baking powder and the salt.
  • In another bowl whisk the eggs, the milk, the butter and the vainilla. 
  • Arrange the bananas on the bottom of the baking dish. Sprinkle 2/3 of the raisins and add the oats mixture and then the egg mixture and make sure the milk moves through the oats.
  • Scatter the remaining raisins and hazelnuts on the top and bake for 35-40 minutes until is nicely golden.
  • Remove from the oven and let cool for some minutes. 
  • You can add more sugar or maple syrup on top if you prefer it more sweet.

PAN DE CENTENO, PERAS & FRUTOS SECOS







































Esta receta de pan es de Juliana Lopez May, una cocinera argentina que me gusta mucho. Este pan se puede hacer con mitad de harina blanca e integral o la proporción que más les guste. Yo esta vez lo probé hacer con harina de centeno y quedo muy rico, aunque este tipo de harinas no leuda y el resultado es un apretado, mas duro pero con mucha fibra.

Ingredientes:
  • 1/2 kg de harina (de centeno o integral o mix)
  • 1 taza de germen de trigo
  • 100grs de pasas de uva
  • 50grs de almendras tostadas
  • 100grs de nueces
  • 1 pera pelada y rallada
  • 1 puñado de peras disecadas (se puede reemplazar por orejones si no encuentran)
  • Zumo de 1 naranja
  • 3 cucharas de miel
  • 3 cucharas de aceite de oliva
  • 1 cucharadas de ricotta (o mató o yogur)
  • 1 huevo
  • 50grs de levadura fresca
  • agua
Pasos:
  • Precalentar el horno a 180º
  • Mezclar los ingredientes secos (harina, almendras, nueces y peras disecadas cortadas) en un bowl y en otro los húmedos (zumo de naranja, pera rallada, aceite, miel, ricotta, huevo y levadura disuelta en agua tibia)
  • Unir las 2 preparaciones e ir agregando agua hasta que quede una masa suave y poco pegajosa (normalmente 1 taza de agua)
  • Dejar leudar 30 minutos en un lugar calido y cubierto.
  • Darle forma de pan con ayuda de mas harina y colocarlo en molde de budin dejando 1/4 de la altura libre para que pueda subir.
  • Dejar reposar media hora más y cocinar durante 40/50 minutos en el horno.
  • Es ideal para el desayuno!


ENGLISH VERSION: RYE BREAD with PEAR & DRIED FRUITS

This bread recipe is from an argentinian cook I really like,  her name is Juliana Lopez May and she normally cook with whole foods and lots of vegetables. This time I did it with rye bread but you can try half whole wheat & regular flour if you dont like rye.  The result of this one is a tight bread since this kind of flour doesn't grow as much as the regular ones.

Ingredients:
  • 1/2 kg of flour (rye or wheat or mix)
  • 1 cup wheat germ
  • 100g raisins
  • 50g toasted almonds
  • 100grs walnuts
  • 1 pear, peeled and grated
  • 1 handful of dried pears (apricots can be replaced if found)
  • Juice of 1 orange
  • 3 tablespoons honey
  • 3 tablespoons olive oil
  • 1 tablespoon of ricotta (or killed or yogurt)
  • 1 egg
  • 50g fresh yeast
  • water
Steps:
  • Preheat oven to 180 º
  • Mix the dry ingredients (flour, almonds, walnuts and chopped dried pears) in a bowl and the wet ones in another one (orange juice, grated pear, oil, honey, ricotta, eggs and yeast dissolved in warm water)
  • Merge the two preparations and keep adding water until dough is smooth and slightly sticky (usually 1 cup water)
  • Let rise 30 minutes in a warm place and covered.
  • Bread shape using more flour and place in pudding mold leaving 1/4 of headroom so you can upload.
  • Let stand for half an hour and cook for 40/50 minutes in the oven.
  • It is perfect for breakfast!
