ARROZ ROJO, SETAS y QUESO GRATINADO


































Hace un mes vinieron a comer Bea y Albert de Publications for pleasure para hablar del próximo número de la revista que publican en el que voy a colaborar y porque además, Bea nos ayudó a nosotros con el logo  y algunos truquitos claves para el blog. Gracias Bea por la gran ayuda! Y Albert por esta foto! :)
Cociné este gratinado inspirado en varias recetas de Heidi Swanson, aunque ella usa creme fraiche pero acá no es muy fácil de encontrar. Y lo acompañé con una ensalada de rabanitos y zanahoria cortada en cilindros finitos y vinagreta con zumo y ralladura de naranja. Muy simple y rica!
Para los catalanes aprovechando que estamos en la época, recomiendo que lo prueben con robellons. Sino las setas que tengais a mano, pero siempre fresas! No en latas, ni congeladas que pierden todo.

Ingredientes:
  • 3 tazas de arroz rojo/salvaje cocido (se puede reemplazar por arroz integral o normal)
  • 250 grs de setas mezcladas (yo use portobello y champignones)
  • 2 huevos
  • 1 cebolla picada
  • 3 dientes de ajo picado chiquito
  • 100 grs de yogur
  • 50 grs de queso blanco
  • 1/2 taza de queso gruyere rayado
  • 2 cuchara de mostaza dijon o a la antigua
  • 1 cuchara de aceite de oliva
  • 1 cuchara de perejil fresco
  • Sal
  • Un trozo de papel plata/de aluminio
Pasos:
  • Este tipo de arroces necesitan más agua  y tardan más en cocerse que el arroz normal, es decir por cada taza de arroz se usan 3 de agua y una vez llevado a ebullición, bajar el fuego y tardará unos 50 minutos en estar listo.
  • Precalentar el horno a 180º y enmantecar una fuente mediana/grande.
  • En un bowl grande batir los huevos, el yogur, el queso blanco, la mostaza y una pizca de sal.
  • En una sartén calentar el aceite y saltear los hongos a fuego medio y dejar que larguen el agua, hasta que se evapore, más o menos 5 minutos o hasta que estén dorados, añadir la cebolla y saltear hasta que esté transparente (2 o 3 minutos más) y por último añadir el ajo por otro minuto. Retirar del fuego y mezclar con el el arroz.
  • Volcar esta preparación sobre los huevos y revolver todo bien.
  • Colocar en la fuente para horno y espolvorear con 2/3 del queso gruyere.
  • Hornear durante 30 minutos cubierto con papel plata y otros 20/30 más sin papel hasta que se dore bien.
  • Al retirarlo del horno espolvorear el perejil picado y el queso gruyere.

1 month ago Bea and Albert from Publications for pleasure came over for lunch. We had a very informal meeting to discuss a colaboration I am going to do with them in the next issue of their magazine. And because Bea helped us with the logo and key tips for the blog, Thanks for your big help Bea  !! and thanks for the photo Albert! :)

Again... this is inspire on a Heidi Swanson recipe, but she use creme fraiche which is not easy to find around so I change it. I also prepare a radish and carrots salad with orange zest and juice on the vinagrette. Quite simple but nice!
For the catalans I highly recommend to try it with robellons, now the perfect time to find them and It will be delicious with them. Otherwise is importante to use fresh mushrooms! Not tinned, not frozen ones, they loose all the flavour!

Ingredientes:
  • 3 cups of wild/red rice (se puede reemplazar por arroz integral o normal)
  • 250 g of mixed mushrooms (I used portobello and champignons)
  • 2 eggs
  • 1 onion, finely chopped
  • 3 garlic gloves finely chopped
  • 100 g of plain yogurt
  • 50 g of spreadable cheese
  • 1/2 cup of gruyere cheese grated
  • 2 tbsp of Dijon style mustard
  • 1 tbsp of olive oil
  • 1 tbsp of parsley
  • Salt
  • A sheet of foil
Steps:
  • To cook this type of rice you will need more water and time than the regular one. For each cup of rice you need 3 of water and after boiling, reduce the heat and cook for another 50 minutes.
  • Preheat the oven at 180º and rub a medium-large baking dish with butter.
  • In a large bowl whisk the eggs, the yogurt, the spreadable cheese, mustard and a pinch of salt.
  • In a large skillet over medium heat, add the oil and the mushrooms and leave the mushrooms alone until they release their water and the water evaporates, about 5 minutes or until golden. The add the onion and cook until is traslucent (2 or 3 minutes more), stir the garlic and cook for another minute, remove from the heat and the rice.
  • Add the rice mixture to the eggs mixture and stir until well combined and turn into the prepared baking dish. Sprinkle with 2/3 of the gruyere cheese.
  • Bake for 30 minutes with a sheet of foil and then remove and bake for another 20-30 minutes until golden.
  • Sprinkle the parley and remaining gruyere cheese.

GUISO DE GARBANZOS, TOMATE Y ESPINACA con BONIATO Y YOGUR






































 
La semana pasada vinieron 3 amigas a cenar a casa, una de ellas estaba saliendo de una gripe fuerte y  coincidio con la llegada del frío en Barcelona. Así que quería hacer uno de esos platos que reconfortan, llenan y que te hacen sentir mejor.
En la misma semana me prestaron el libro THE COOKBOOK del genial cocinero Ottolenghi y encontré esta receta que cumplía con todos los requisitos y aunque es casi igual cambie algunas cositas...
La receta original lleva semillas de cilantro y cómino, que no son mis favoritas.También lleva tomate en lata, que reemplazé por natural.

Ingredientes:
Guiso:
  • 200grs de garbanzos secos (o 400-450grs si los compran cocidos)
  • 1 cucharada pequeña de bicarbonato de sodio
  • 2 cucharadas de aceite de oliva
  • 1 cebolla (cortada chiquita)
  • 400grs de tomates perita (cortados a la mitad y rallados sin piel)
  • 1 cucharada de azúcar moreno.
  • 100grs de hojas de espinacas
  • Sal & pimienta
  • Especias: Pimentón, Perejil, Chile, Oregano
  • 1 taza de caldo de verduras (si es casero mejor)
Boniatos dulces
  • 500grs de boniato/batata (pelada y cortada en rodajas de 2cm)
  • 700ml de agua
  • 2 cucharadas de mantequila
  • 2 cucharas de miel
  • Sal 
Salsa de yogur:
  • 100gs de yogur natural (o griego)
  • Zumo y ralladura de 1 limón
  • 3 cucharadas de aceite de oliva
  • 1 cucharada de menta seca

Pasos:
  • Si partes de cero con los garbanzos, déjalos en remojo la noche anterior (mínimo durante 12hs) en un bowl con el doble de agua que de garbanzos y añadir el bicarbonato de sodio, que hace que mantenga la piel tierna. Al día siguiente escurrirlos y en una olla poner agua nueva cubriendolos, llevar a hervor y cocinar a fuego lento durante 1hra y media (mínimo). Cuando estén listos colar y enjuagar.
  • Poner el boniato en una olla grande con el agua, la mantequilla, la miel y sal y llevar a a hervir, luego bajar el fuego  y cocinar por 35-40 minutos, hasta que estén bien tiernas. Apagar el fuego y mantenerlas calientes hasta servir.
  • Mientras en otra olla grande saltea la cebolla junto con las especias hasta que esté dorada, añade el tomate rallado, el azúcar. A los 5 minutos añadir la taza de caldo y salpimentar.
  • Añadir la espinaca y los garbanzos. Cocinar durante 5 minutos más.
  • Para hacer la salsa de yogur mezclar todos los ingredientes y añadir sal y pimienta a gusto.
  • Para servir poner como base el guiso de garbanzos, un par de rodajas de boniato y la salsa de yogur. 
English version:  CHICKPEAS, TOMATO AND SPINACH STEW with SWEET POTATOS & YOGURT
Last week I had 3 friends for dinner, one of them was recovering from a strong cold and Barcelona just started to get colder. So I wanted to do a filling and conforting dish. The same week another friend lend me a book from the great chef Ottolenghi (The cookbook) and I found this recipe that was exactly what I was looking for.
The original recipe had cumin and coriander seeds which aren´t my favorites and also tinned tomatos that I changed for fresh ones.

Ingredients:
Stew
  • 200grs of dried garbanzos (or 400-450grs if you buy them cooked)
  • 1tbsp bicarbonate of soda
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 400grs of tomatos (cut into halves and grated without skin)
  • 1tbsp caster sugar
  • 100gs of spinach leaves
  • Salt & Pepper
  • Spices I choose: Paprika, Chilli, Persil and Oregano
  • 1 cup vegetable broth 

Sweet Potatos
  • 500grs sweet potatos, peeled and cut into 2cm slides
  • 700ml water
  • 2 tbsp butter
  • 2 tblsp honey
  • salt
Yogurt sause
  • 100grs plain yogurt (or greek)
  • Juice and grated zest of 1 lemon
  • 3 tbsp olive oil
  • 1 tbsp of dried mint
 Steps:
  • If you start from scracht with the chickpeas, Place them in a large bowl the night before.with water twice their height and add the bicarbonate, that helps the skin to get tender. At least they should be during 12 hrs. The next day, drain and rinse the chickpeas, place them in a large saucepan and cover with plenty of fresh water. Bring them to boil and then reduce the heat and simmer for 1,30 hrs (maybe more). When they are ready drain and let them sit.
  • Put the sweet potatos in a wide saucepan with the water, the butter, honey and salt. Bring it to boil and reduce the heat and simmer for 35-40minutes, until the potatos are tender. Remove from the heat and keep warm
  • While the potatos are cooking, heat the olive oil in a large frying pan and add the onion and the spices. Fry until golden and add the grated tomato and the sugar. After 5 minutos, add the broth and adjust seasoning.
  • Add the spinach leaves and chickpeas and check seasoning again.
  • For the yogurt sauce whisk all ingredients with salt and pepper to taste.
  • Serve with the chickepeas in the bottom, 2 or 3 slices of sweet potatos and a spoon of yogurt sauce on the side.

HUMMUS DE BONIATO


Me gusta mucho el hummus y hace poco encontré esta receta, en la que se le da un sabor y un color especial gracias al boniato. Es ideal para un pica-pica informal o para servir como entrante, y también para llevar de picnic! Por cierto, saqué esta receta de la web de Wholeliving.

INGREDIENTES:
  • 1 boniato (batata) mediano
  • 500 gramos de garbanzos cocidos (un bote grande)
  • Zumo de un limón
  • 2 cucharadas de tahini
  • 2 cucharadas de aceite de oliva
  • 1 diente de ajo
  • Comino
  • Sal y pimienta
  • Pan de pita y verduras crudas como zanahoria, apio o coliflor, para acompañar.
PASOS
  • Cortar el boniato en dados pequeños y cocinar al vapor. Dependiendo del tamaño de los dados, tardará más o menos en hacerse, pero con 10 minutos debería bastar para estar tierno. También se puede hervir el boniato si se prefiere.
  • Mezclar los garbanzos, el zumo del limón, el tahini, el aceite, el ajo y el comino y batir bien con una batidora eléctrica. Si nos queda demasiado espeso se puede añadir agua.
  • Cuando la mezcla esté bien homogénea, añadr sal y pimienta al gusto.
Se puede guardar sin problemas en la nevera hasta una semana!

COLIFLOR AL HORNO CON LIMÓN



Esto es tan fácil que casi ni es una receta, pero al descubrirla casi deje de comer coliflor hervida y me pasé a esta receta.
La hice con oregano esta vez pero puede ser con cualquier especie que te guste, queda muy bien con curry o pimentón...o un mix de varias.
Se puede usar como acompañamiento o sobre una base de ensalada de rúcula como entrada.

Ingredientes:
  • 1 Coliflor
  • Aceite de oliva (a gusto)
  • 1 limon
  • Sal & Pimienta
  • Oregano
Pasos:
  • Precalentar el horno a 200º
  • Lavar la coliflor y cortar los arbolitos mas o menos de tamaños parejos, para que la coccion sea uniforme.
  • En un bowl  mezclar el aceite de oliva con las especies elegidas, sal & pimienta.
  • En una placa de horno colocar los arbolitos y pintar con la mezclar. Y por encima la ralladura del limón.
  • Colocar en el horno durante 15 minutos. Al sacarlo echarle zumo de limon exprimido ( a gusto)

English version: ROASTED CAULIFLOWER WITH LEMON

This is so easy that is almost not a recipe. But the truth is that since I have tried this way of cooking the cauliflowe I have boiled it again!
You can try it with curry or paprika instead or a mix of your favorite spices. Is good as a side dish or over rocket salad as a starter.

Ingredients:
  • Cauliflower
  • Olive oil
  • 1 lemon
  • Salt & Pepper
  • Oregano (or spice of your choice)
Steps:
  • Preheat the oven at 200º
  • Wash the cauliflower and cut into small even trees, so the cooking is at the same time.
  • In a small bowl mix the olive oil, spices and salt&pepper.
  • Place the cauliflower on a baking sheet and paint the trees with the oil mix. Add the lemon zest over it and bake during 15'.
  • Add squeeze of lemon over and serve!

CALABAZA AL HORNO







































Lo que más me gusta de este plato es que son pocos ingredientes y aprovechados al 100%!  Y es otra opción más rica que la calabaza hervida! En Argentina esta verdura es casi de todos los días, pero acá en España es más raro así que denle una oportunidad a esta verdura dulzona que está buenísima!

Ingredientes:
  • 1 calabaza mediana
  • 2 huevos
  • Especias: Pimientón, Comino (o las que prefieras)
  • 4 dientes de ajo
  • Sal & pimienta
  • Aceite de oliva

Pasos:
  • Lavar la calabaza y cortar a la mitad, a lo largo. Quitar las pepitas + la pulpa y apartar (no tirar). Luego cortar en rodajas de 1cm aproximadamente.
  • Encender el horno, echar un chorro de aceite sobre una placay colocar las rodajas de calabaza con un poco de sal, pimienta, pimentón y comino por encima, luego los ajos cortados en mitades y hornear a 180º durante 20 minutos (o hasta que estén cocinadas).
  • Mientras hervir 2 huevos durante 9 minutos partiendo de agua fría. Dejar enfriar y picar en cubos.
  • Separar la pulpa de las semillas del centro de la calabaza, que habíamos apartado. Lavar las semillas con agua y secar bien. Descartar la pulpa.
  • En una sartén, calentar aceite a fuego medio y saltear las pepitas, salar y tapar removiendo de vez en cuando, ya que las pepitas se inflan un poco y hacen una pequeña explosión (como para hacer palomitas de maíz, pero sin llegar a abrirse). Y cuando están doradas y crocantes (no quemadas) apagar y dejar reposar sin la tapa.
  • Para preparar el plato primero las calabazas con un chorrito de aceite de oliva, los huevos picados en daditos y las pepitas salteadas con sal. 

English version: ROASTED PUMPKIN
My favorite thing about this dish is envolves very few ingredients and utilized 100%! And its another option to the boring boiled pumpkin! In Argentina we eat this vegetable very often but here in Spain is rarer so give a chance to this sweet-tastefull vegetable!

Ingredients:

  • 1 medium pumpkin
  • 2 eggs
  • Spices: Paprika, Cumin (or your choice)
  • 4 cloves garlic
  • Salt & pepper
  • Olive oil 


Steps:

  • Wash the squash and the cut it in half lengthwise. Remove the seeds and the pulp. Then cut into 1cm slices.
  • Turn on the oven, pour a little oil over a tin and place the slices of squash with a little salt, pepper, paprika and cumin above, then the garlic gloves cut into halves and bake at 180 degrees for 20 minutes (or until cooked) .
  • Boil the eggs during 9 minutes, starting from cold water. Let them cool and chopped into cubes.
  • Separate the pulp from the seeds. Wash the seeds with water and dry thoroughly. Discard the pulp.
  • In a skillet, heat oil over medium heat and saute the seeds with salt and cover, stirring occasionally, because the seeds will inflate a bit and make a small explosion. And when they are golden and crispy (not burnt) turn the heat off and let them sit without covering.
  • Over a plate: Add the squash with a drizzle of olive oil, the eggs and sauteed seeds.
