GRANOLA

Ingredientes:
  • 3 platanos/bananas (bien maduros) pisados

ENGLISH VERSION: OATS & BANANA small BITES!

I love this recipe because of the simplicity and most of all because I doesn't have the 3 top ingredients for cookies... no eggs, no flour and no sugar! And they are delicious! Riped bananas, together with the coconut is enough sweet for me!
Is a great way to introduce oats to Kids, my niece Sofia loves them!

Ingredients:
  • 3 large, ripe bananas, well mashed (about 1 1/2 cups)
  • 1 teaspoon vanilla extract
  • 1/4 cup olive oil
  • 2 cups rolled oats
  • 2/3 cup almond meal (you can make it by smashing the almonds with the processor)
  • 1/3 cup coconut, finely shredded & unsweetened
  • 1 teaspoon baking powder
  • 6 - 7 ounces of dark chocolate bar (you can replace them with raisins!)

Steps:
  • Preheat oven to 250 degrees
  • In a large bowl combine the bananas and olive oil. Set aside.
  • In another bowl whisk together the oats, almond meal, shredded coconut and baking powder.
  • Add the dry ingredients to the wet ingredients and stir until combined. Fold in the chocolate chunks/chips (or raisins)
  • Make small bols, the size of cherry tomatos and place on the baking sheet leaving space in between them.
  • They need to be golden, so depending your oven they will need between 12 to 15 minutes.
