TOMATES RELLENOS CON HIERBAS







































Hace meses me compré PLENTY, uno de los libros de Ottolenghi, un cocinero que me encanta! Y con la excusa de que venían unos amigos & compañeros de trabajo a cenar cociné estos tomates rellenos para acompañar unas hamburguesas de garbamzos (muy parecidas a las hamburguesas de lentejas que hice antes).
Muy recomendable como entrada con una ensalada! o como principal de acompañante. Yo le cambié algunas de las hierbas y añadí queso feta, para acentuar el sabor mediterrano.
Creo que es de esas recetas que repetiré una y otra vez!!

INGREDIENTES:
  • 8 tomates medianos (maduros pero aún firmes)
  • 2 cebollas picadas finitas (mejor si teneis una colorada y otra normal)
  • 2 dientes de ajo picados
  • 2 puñados de aceitunas negras
  • 1/2 taza de pan rallado (si conseguis panko-el japonés mejor)
  • 2 cucharadas de menta fresca picada
  • 2 cucharadas de perejil
  • 2 cucharadas de eneldo
  • 2 cucharadas de alcaparras
  • sal & pimienta negra
  • Queso feta a gusto.
  • Aceite de oliva
PASOS:
  • Precalienta el horno a 160ºC. Corta una tapita en la parte superior de cada tomate y desecha.
  • Con una cuchara vacia el interior de cada tomate, hasta que queden como un bowl limpio. Añade un poco de sal y coloca boca abajo en un colador, para que pierdan agua.
  • Mientras tanto en una sartén con aceite añade la cebolla picada, el ajo y las olivas y cocina a fuego bajo durante unos 6 minutos o hasta que la cebolla esté blandita, luego remueve del fuego y añade el resto de los ingredientes: pan rallado, las hierbas, alcaparras y salpimienta.
  • Con un papel absorbente de cocina, seca el interior de los tomates. Luego añade el relleno presionando bien. En el centro de cada tomate coloca un cuadradito de queso feta y luego tapa con más relleno. 
  • Coloca los tomates en una fuente de horno con aceite de oliva en la base. En la parte de arriba añade unos trozos desparejos de queso feta y un chorrito de aceite a cada uno.
  • Hornea durante unos 35-40 minutos o hasta que los tomates estén hechos. A disfrutar!


ENGLISH VERSION: HERB- STUFFED TOMATOES

A couple of months ago I bought PLENTY, one of Ottolenghi's book, that is one of my favorites cooks. Days after that some friends from work came over for dinner and I made this stuffed tomatoes as a side dish for chickpeas burguer, very similar to the ones I did some time ago with lentils.

They can be a great started together with some salad or a side dish. I have changed some of the herbs and added feta cheese, to make even stronger the mediterranen taste.
I think I will be doing this recipe many times, it has became a favorite!

INGREDIENTS:
  • 8 medium tomatoes (ripe but firm)
  • 2 onion, finely chopped (if you have a red onion use it together with a yellow one)
  • 2 garlic cloves, finely chopped
  • 2 handfull of black olives
  • 1/2 cup of panko or regular breadcrumbs
  • 2 tbsp chopped mint
  • 2 tbsp chopped parley
  • 2 tbsp chopped dill
  • 2 tbsp chopped capers
  • salt & black pepper
  • Feta cheese ( optional)
  • Olive oil

STEPS:
  • Preheat the oven to 160ºC (or 325ºF) Cut the top head of each tomato and discard.
  • Use a little spoon to remove the seed and the flesh inside the tomatoes, leaving it as a clean bowl.
  • Salt the inside of each tomato and place them upside down in a colander, to drain off some water.
  • Meanwhile add the onion, garlic and olives on a pan with olive oil and cook on low heat during 6 minutes or until the onion soften. Remove and stir the breadcrumbs, herbs and capers. Add salt and pepper to your taste. 
  • Wipe the insides of the tomatoes with a paper towwl and then fill them up, pressing down and if you like add a small piece of feta cheese in the center, continue filling gently.
  • Place the tomatoes in an ovenproof dish with some olive. Sparkle som more feta cheese on top and a drizzle of olive oil.
  • Bake for 35-40 minutes or until the tomatoes are cooked. Et voilá!

HUMMUS DE GUISANTES Y AGUACATE






































Hace un tiempo posteé una receta de un Hummus de boniato que tuvo bastante éxito. Ahora os propongo otro "Hummus"a base de aguacate y boniato. Yo lo cociná para la cena de Fin de Año y lo cierto es que gustó mucho.

INGREDIENTES:
  • 1 aguacate maduro
  • 1 lata mediana de guisantes hervidos, 350 gramos escurridos
  • 1 diente de ajo
  • Zumo de media lima, sal, pimienta
  • Pan integral
PREPARACIÓN
  •  Sacar la pulpa del aguacate y machacar con un tenedor en un bol mediano.
  • Añadir el zumo de lima y mezclar bien.
  • Añadir la sal, el ajo machacado y los guisantes escurridos. Mezclar con la batidora eléctrica a potencia media o alta hasta que quede una pasta uniforme.
  • Para servir, cortar el pan en rebanadas y untar con el hummus de aguacate. Añadir finalmente pimienta por encima para darle un toque final.

English version: AVOCADO AND PEA HUMMUS

Ingredients:
  • 1 ripe avocado
  • 1 medium can of peas, drained (350 g)
  • 1 clove garlic
  • Juice of half a lime, salt and pepper
  • Wholegrain bread
Steps:
  • Take the pulp of the avocado and mash it with a fork in a medium bowl.
  • Add the juice of the lime and mix well together.
  • Add a bit of salt, the mashed garlic clove and the drained peas. Mix with the hand blender to a medium or high power until you get a homogeneous mixture
  • Cut the bread into slices and spread the hummus over it. Finally, add the pepper if you want to give a special touch to it.

ENSALADA DE INVIERNO








































Esta fué la primera ensalada que preparé en el año! Harta de tanta comida de navidad necesitaba algo fresco y liviano. No tenía a mano semillas de calabaza o pipas de girasol pero le quedarían perfectas!
Es una ensalada muy simple pero lo que hace la diferencia es la cocción de las remolachas al horno, que conservan el sabor mucho más que hervidas...

Ingredientes: (Para una ensalada para 3-4 personas)
  • 2 atados de rúcula o (1 paquete)
  • 1 cebolla colorada
  • 2 remolachas crudas
  • 1 o 2 naranjas
  • Zumo de 1/2 limón
  • Zumo de 1/2 naranja
  • Aceite de oliva
  • Sal y Pimienta
  • Papel plata (o de aluminio)
Pasos:
  • Envolver las remolachas en papel plata y poner en el horno fuerte (250º) durante 1 hora y media mas o menos, dependiendo del horno puede que antes. Tienen que estar bien hechas.
  • Una vez cocinadas, pelar y dejar enfriar. Una vez frías cortarlas en gajos y colocarlas en un bowl junto al zumo de limón y naranaja. Dejar reposar un rato asi la remolacha teñirá el zumo.
  • En una ensaladera plana colocar la rúcula como colchón, encima la cebolla cortada en pluma y las remolachas escurridas. 
  • Pelar las naranjas y cortar en rodajas y luego mitades. 
  • Añadir a los zumos sal, pimienta y  un poco de aceite de oliva. Mezclar bien y volcar sobre la ensalada.


ENGLISH VERSION: Winter salad



This was the first salad I prepared this year! After Christmas all I wanted was something fresh and light! I didn't had pumpkin or sunflower seeds but they work perfectly with this salad!
Is very simple and the key is the roasted beetroots that they keep the flavour intact, a lot better than just the boiled ones...

Ingredients: (For 3-4 persons)

  • 2 big handfull of arugula/rocket 
  • 1 red onion
  • 2 fresh beets
  • 1 or 2 oranges
  • 1/2 lemon juice
  • 1/2 orange juice
  • Olive oil
  • Salt and pepper
  • Aluminun foil
Steps:

  • Cover the beets with the aluminum foil and place them in the oven (250º) during around 1 hour and a half, depending your oven maybe less. They should be tender and cooked.
  • Then peeled them and when cold, cut them in wedges and place them in a bowl together with the lemon and orange juices, until the juices will change their color to redish. 
  • Over a large salad plate make a bed with the arugula (rocket), place the the onion cuted in small plumes and the beets without the juices.
  • Peeled the oranges and cut them in slices and the halves. 
  • Add salt, pepper and olive oil to the juices and mix well. Add the vinagrete to the salad and enjoy!

HUMMUS DE BONIATO


Me gusta mucho el hummus y hace poco encontré esta receta, en la que se le da un sabor y un color especial gracias al boniato. Es ideal para un pica-pica informal o para servir como entrante, y también para llevar de picnic! Por cierto, saqué esta receta de la web de Wholeliving.

INGREDIENTES:
  • 1 boniato (batata) mediano
  • 500 gramos de garbanzos cocidos (un bote grande)
  • Zumo de un limón
  • 2 cucharadas de tahini
  • 2 cucharadas de aceite de oliva
  • 1 diente de ajo
  • Comino
  • Sal y pimienta
  • Pan de pita y verduras crudas como zanahoria, apio o coliflor, para acompañar.
PASOS
  • Cortar el boniato en dados pequeños y cocinar al vapor. Dependiendo del tamaño de los dados, tardará más o menos en hacerse, pero con 10 minutos debería bastar para estar tierno. También se puede hervir el boniato si se prefiere.
  • Mezclar los garbanzos, el zumo del limón, el tahini, el aceite, el ajo y el comino y batir bien con una batidora eléctrica. Si nos queda demasiado espeso se puede añadir agua.
  • Cuando la mezcla esté bien homogénea, añadr sal y pimienta al gusto.
Se puede guardar sin problemas en la nevera hasta una semana!

COLIFLOR AL HORNO CON LIMÓN



Esto es tan fácil que casi ni es una receta, pero al descubrirla casi deje de comer coliflor hervida y me pasé a esta receta.
La hice con oregano esta vez pero puede ser con cualquier especie que te guste, queda muy bien con curry o pimentón...o un mix de varias.
Se puede usar como acompañamiento o sobre una base de ensalada de rúcula como entrada.

Ingredientes:
  • 1 Coliflor
  • Aceite de oliva (a gusto)
  • 1 limon
  • Sal & Pimienta
  • Oregano
Pasos:
  • Precalentar el horno a 200º
  • Lavar la coliflor y cortar los arbolitos mas o menos de tamaños parejos, para que la coccion sea uniforme.
  • En un bowl  mezclar el aceite de oliva con las especies elegidas, sal & pimienta.
  • En una placa de horno colocar los arbolitos y pintar con la mezclar. Y por encima la ralladura del limón.
  • Colocar en el horno durante 15 minutos. Al sacarlo echarle zumo de limon exprimido ( a gusto)

English version: ROASTED CAULIFLOWER WITH LEMON

This is so easy that is almost not a recipe. But the truth is that since I have tried this way of cooking the cauliflowe I have boiled it again!
You can try it with curry or paprika instead or a mix of your favorite spices. Is good as a side dish or over rocket salad as a starter.

Ingredients:
  • Cauliflower
  • Olive oil
  • 1 lemon
  • Salt & Pepper
  • Oregano (or spice of your choice)
Steps:
  • Preheat the oven at 200º
  • Wash the cauliflower and cut into small even trees, so the cooking is at the same time.
  • In a small bowl mix the olive oil, spices and salt&pepper.
  • Place the cauliflower on a baking sheet and paint the trees with the oil mix. Add the lemon zest over it and bake during 15'.
  • Add squeeze of lemon over and serve!

CALABAZA AL HORNO







































Lo que más me gusta de este plato es que son pocos ingredientes y aprovechados al 100%!  Y es otra opción más rica que la calabaza hervida! En Argentina esta verdura es casi de todos los días, pero acá en España es más raro así que denle una oportunidad a esta verdura dulzona que está buenísima!

Ingredientes:
  • 1 calabaza mediana
  • 2 huevos
  • Especias: Pimientón, Comino (o las que prefieras)
  • 4 dientes de ajo
  • Sal & pimienta
  • Aceite de oliva

Pasos:
  • Lavar la calabaza y cortar a la mitad, a lo largo. Quitar las pepitas + la pulpa y apartar (no tirar). Luego cortar en rodajas de 1cm aproximadamente.
  • Encender el horno, echar un chorro de aceite sobre una placay colocar las rodajas de calabaza con un poco de sal, pimienta, pimentón y comino por encima, luego los ajos cortados en mitades y hornear a 180º durante 20 minutos (o hasta que estén cocinadas).
  • Mientras hervir 2 huevos durante 9 minutos partiendo de agua fría. Dejar enfriar y picar en cubos.
  • Separar la pulpa de las semillas del centro de la calabaza, que habíamos apartado. Lavar las semillas con agua y secar bien. Descartar la pulpa.
  • En una sartén, calentar aceite a fuego medio y saltear las pepitas, salar y tapar removiendo de vez en cuando, ya que las pepitas se inflan un poco y hacen una pequeña explosión (como para hacer palomitas de maíz, pero sin llegar a abrirse). Y cuando están doradas y crocantes (no quemadas) apagar y dejar reposar sin la tapa.
  • Para preparar el plato primero las calabazas con un chorrito de aceite de oliva, los huevos picados en daditos y las pepitas salteadas con sal. 

English version: ROASTED PUMPKIN
My favorite thing about this dish is envolves very few ingredients and utilized 100%! And its another option to the boring boiled pumpkin! In Argentina we eat this vegetable very often but here in Spain is rarer so give a chance to this sweet-tastefull vegetable!

Ingredients:

  • 1 medium pumpkin
  • 2 eggs
  • Spices: Paprika, Cumin (or your choice)
  • 4 cloves garlic
  • Salt & pepper
  • Olive oil 


Steps:

  • Wash the squash and the cut it in half lengthwise. Remove the seeds and the pulp. Then cut into 1cm slices.
  • Turn on the oven, pour a little oil over a tin and place the slices of squash with a little salt, pepper, paprika and cumin above, then the garlic gloves cut into halves and bake at 180 degrees for 20 minutes (or until cooked) .
  • Boil the eggs during 9 minutes, starting from cold water. Let them cool and chopped into cubes.
  • Separate the pulp from the seeds. Wash the seeds with water and dry thoroughly. Discard the pulp.
  • In a skillet, heat oil over medium heat and saute the seeds with salt and cover, stirring occasionally, because the seeds will inflate a bit and make a small explosion. And when they are golden and crispy (not burnt) turn the heat off and let them sit without covering.
  • Over a plate: Add the squash with a drizzle of olive oil, the eggs and sauteed seeds.
