ENSALADA DE CAQUI Y GRANADA



Hasta hace un par de semanas, podía contar con los dedos de una mano las veces que había comido caquis. Pero eso ha cambiado gracias a esta receta que vi en el blog Directo al paladar. Se trata de una ensalada diferente, muy original, y que además resulta preciosa estéticamente. Los colores de la granada y el caqui sobre la lechuga la hacen muy atractiva.
Debería puntualizar que para esta ensalada es mejor usar caquis inmaduros, llamados Persimón. Sí, yo tampoco lo había oído nunca pero si os fijáis en la frutería veréis que son muy comunes!

Ingredientes:
  • 1 persimón (caqui inmaduro)
  • Media granada
  • Lechuga de hoja de roble
  • 10 nueces
  • Queso parmesano en virutas
  • Aceite, vinagre, sal.
Preparación:
  • Lavar y cortar la lechuga, y repartirla en una fuente, ya que servirá de base de la ensalada.
  • Lavar el persimón y cortarlo en finas rodajas, sin pelarlo. Colocar las rodajas sobre la lechuga.
  • Desgranar la granada. Para ello, lo mejor es golpear una mitad de la granada con una cuchara grande. Sacar los trozos de piel que hayan podido caer y repartir las pepitas en la ensalada.
  • Añadir las nueces y aliñar la ensalada.
  •  Finalmente, decorar con las virutas de queso parmesano.

ENGLISH VERSION: Persimmon and pomegranate salad

Ingredients:
  • 1 persimmon
  • Half a pomegranate
  • Lettuce
  • 10 walnuts
  • Parmesano cheese
  • Oil, Vinegar, Salt
Steps:
  • Wash and chop the lettuce, and place it on adish.
  • Wash the persimmon and slice it with the skin on it. Place the slices over the lettuce.
  • Take the seeds of the pomegranate and distribute over the salad.
  • Add the walnuts and season the salad.
  • Finally, dress with the Pamesan cheese in small bits.

AVENA CON PLÁTANO y PASAS al HORNO








































Desde hace más de un año empezé a desayunar avena y aunque la mayoría de las veces la preparo en un bowl, ya sea cruda o cocida... siempre estoy buscando recetas para probar y esta es una que hago de vez en cuando, sobre todo las semanas que sé que tendré poco tiempo a la mañana y necesito un desayuno para llevar. Es más rico tibio, recién salido del horno...pero frío también está bien.

Ingredientes:
  • 200grs o 2 tazas de avena entera
  • 450 ml o 2 tazas de leche de avena (o leche normal)
  • 2 bananas/plátanos bien maduras, cortada en rebanadas de 1cm
  • 180grs de pasas de uvas (o arándanos o ciruelas o orejones)
  • 1 huevo
  • 2 cucharadas de mantequilla
  • 60grs de avellanas (o nueces o almendras)
  • 60grs de azucar moreno o sirope de arce
  • 1 cuchara de extracto de vainilla
  • 1 cuchara de polvo de hornear
  • 1 pizca de sal
Pasos:
  • Precalentar el horno a 190º y enmantecar un molde grande para horno.
  • En un bowl mezclar la avena, la mitad de las avellanas, el azúcar, el polvo de hornear y la sal
  • En otro bowl batir el huevo y mezclar la leche, la mantequilla y vainilla.
  • En el molde del horno colocar las rodajas de banana como base, y añadir 2/3 de las pasas de uva. Cubrir con la mezcla de la avena y volcar con la mezcla del huevo  y mover el molde para que asegurar que la mezcla cubre todo bien. 
  • Espolvorear con el resto de las pasas y avellanas por encima y colocar en el horno por 35-40 minutos, hasta que esté bien dorada. 
  • Retirar del horno y dejar enfriar un poco. Se puede añadir más azucar o sirope de arce si te gusta más dulce. 

English version: BAKED OATMEAL with BANANA and RAISINS

One year ago I started to eat oats for breakfast, mostly oatmeal/porridge or as cereal but I´m always looking for new recipes to try with oats. This one I do it normally in those hectic weeks that I know that I won´t have time in the mornings and I need breakfast ready-to-go!

Ingredients
  • 200g or 2 cups of rolled oats
  • 450ml or 2 cups of oat milk (or regular)
  • 2 ripe bananas cut into 1cm slices
  • 180g raisins (or berries of your choice)
  • 1 egg
  • 60g of hazelnuts (or mixed nuts)
  • 60g of cane sugar
  • 1 tbsp of vanilla extract
  • 1 tbsp of baking powder
  • A pinch of salt
Steps:
  • Preheat the oven to 190º and butter the inside of a large baking dish.
  • In a bowl mix the oats, halves of the hazelnuts, sugar, baking powder and the salt.
  • In another bowl whisk the eggs, the milk, the butter and the vainilla. 
  • Arrange the bananas on the bottom of the baking dish. Sprinkle 2/3 of the raisins and add the oats mixture and then the egg mixture and make sure the milk moves through the oats.
  • Scatter the remaining raisins and hazelnuts on the top and bake for 35-40 minutes until is nicely golden.
  • Remove from the oven and let cool for some minutes. 
  • You can add more sugar or maple syrup on top if you prefer it more sweet.

SOPA DE CALABAZA Y ARROZ






































Es tiempo de comida de color naranja, como la calabaza o el boniato! En esta receta utilizo estos dos ingredientes para hacer una sopa y lo combino con arroz y huevo duro para tener un plato completísimo! Tomé la idea, de nuevo, de una receta del blog 101cookbooks.

INGREDIENTES:
  • 1 cebolla grande
  • 1 boniato mediano (unos 150 g)
  • 600 g de calabaza
  • Aceite, sal, pimienta y pimentón (opcional)
  • 800 ml de caldo de verduras (si no se tiene, agua)
  • 200 g de arroz integral
  • Queso fresco batido
  • 2 huevos duros
  • Pepitas de calabaza o girasol para decorar.
PREPARACIÓN:
  • Picar la cebolla y poner a rehogar en una olla con un poco de aceite. Dejar que se ablande a fuego medio, unos 5-7 minutos. Salar y añadir el pimentón si se quiere.
  • Pelar el boniato y la calabaza y cortar en dados. Añadirlos a la olla junto a 800 ml de caldo de verduras.
  • Llevar a ebullición y dejar hirviendo hasta que la verdura esté tierna, unos 15 minutos.
  • Apartar del fuego y procesar con la batidora. Añadir sal si es necesario.
  • Hervir el arroz según las instrucciones. El tiempo de cocción varía según la variedad.
  • Servir en un plato hondo el arroz, la sopa de calabaza y añadir una cucharada de queso crema.
  • Finalmente, añadir a la sopa un puñado de semillas de calabaza o girasol y huevo duro picado.

English version: PUMPKIN AND RICE SOUP

INGREDIENTS:
  • 1 big onion
  • 1 medium sweet potato (about 150 g)
  • 600 g pumpkin
  • 800 ml vegetable stock
  • 200 g brown rice
  • Crème fraiche
  • 2 hard-boiled eggs
  • Pumpkin or Sunflower seeds
  • Olive oil, salt, pepper and cayenne pepper (optional)
STEPS
  • Chop the onion and cook until softened in a large soup pot with some olive oil. Add salt, pepper and cayenne pepper inf wanted, and leave cooking for 5-7 minutes.
  • Peel and dice the sweet potato and the pumpkin. Add them to the pot and add also the vegetable stock.
  • Bring to a boil and leave until the vegetables are tender, about 15 minutes.
  • Remove from heat and puree with a hand blender. Add salt if necessary.
  • Boil the rice in water following the instructions. The boiling time differ between different rice varietals.
  • Serve the pumpkin soup over a big sccop of rice in a soup dish. Add a spoonful of creme fraiche, and a bunch of pumpkin seeds and chopped hard-boiled egg over the soup.
